Piña Colada boozy popsicles

First of all I’d like to be congratulated on resisting the urge to start this post with “If you like piña coladas…”. It was really hard, people. But on a more serious note, these popsicles are on a different level and I don’t know why they aren’t more popular! Bacardi, here’s a business idea for you. Made just like a traditional piña colada, these popsicles take the classic cocktail to another level with a hint of nutmeg and fresh pineapple. I also believe that these taste so great because I used the cutest teeniest pineapples in the world. Want to learn the recipe for these “portable” piña colada’s? Read on!

what you need:

  • 1 cup chopped fresh pineapple
  • 1/2 cup pineapple juice
  • 1/3 cup white rum
  • pinch of nutmeg
  • 1 can sweetened coconut cream/milk
  • popsicle mold + sticks (you can use small plastic cups if you don’t have molds!)
  • shredded coconut for garnishing

*makes 6 popsicles

the how-to:

step one: blend the fresh pineapple and pineapple juice then stir the white rum into the pineapple mixture

step two: mix the nutmeg into the coconut cream in a separate container

step three:  pour both the pineapple mixture and coconut cream into a mold at the same time. This allows you to get that “swirled” effect.

step four: freeze your popsicles. After they have set very slightly (about 15 mins), stick the popsicle sticks in. Garnish with coconut flakes and enjoy!

Idea for eating or serving  these: chop up some fresh cherries and mix with shredded coconut. Dip in before each bite.

These taste just like the real deal except they are somehow better. No complaints here. On the same day that I made these I made two other popsicle recipes that I know y’all are going to love. You’re just going to have to be patient until the recipes are posted, in the meantime eat as many boozy piña colada popsicles as you want!
