Blueberry Smoothie Bowl

Hands up if you are a breakfast person! I love breakfast, people, and there are often times where I’d go to bed dreaming of what to make in the morning. I keep things relatively simple by eating the same thing almost every day – no fault of mine. When I have time it’s the whole English breakfast shindig, and on days that I am more rushed it’s an eggo waffle and juice or cereal. Lately I’ve been so consumed with life and personal projects that I’ve become one of those people that skips breakfast. *gasp*. Now that I’ve confessed this I can move on to saying that I’m trying to find ways to rectify this situation and this breakfast smoothie bowl is one of them. Let’s see: it’s pretty to look at, packed with antioxidants, vegan, easy to make, and oh, IT’S IN A COCONUT.IMG_3968

I’m hoping that adding this recipe to my breakfast repertoire will get me more interested in breakfast again (Make Breakfast Great Again!) and I’ll do less of the skipping thing. Why not try it out for yourself?

what you need:

  • coconut (completely optional, but if you want an Instagram-worthy bowl – this is it)
  • 1/2 cup blueberries
  • 1 banana
  • 3/4 cup almond milk
  • shredded coconut
  • other toppings of your choice: e.g. banana, almonds, chia seeds, strawberries, blueberries, etc

step one: crack open your coconut using a hammer or other appropriate too. I used a hammer and followed this tutorial.

step two: blend blueberries, banana and almond milk till smooth. Add ice and blend some more.

step three: pour smoothie into coconut bowl and Top with shredded coconut and other toppings of your choice. Eat up!

This bowl was inspired by the numerous açai bowls out there that stay popping up on my Pinterest feed. I knew that I probably wouldn’t be able to find açai (or maybe I was just too lazy to look) so I used blueberries instead and they worked great! What I love about this recipe is that the topping possibilities are endless and 100% up to you. Throw in some chia seeds, maybe top with crushed almonds? Do you, boo.
