Hibiscus Mojito

Labor day was a quiet one for me and M. We stayed at home most of the day with the exception of a pseudo-barbecue, but it was the most excellent day because of these mojitos. As you may already know, I love to experiment with mojito recipes like passion fruit and ginger, and this recipe is my newest creation. Coming in first to all the other recipes I’ve cooked up, this cocktail is both tangy and refreshing and is the perfect end-of-summer sipper. I’m hooked!

I have to admit that it was super easy to keep making these because I had made a whole jug of sorrel/sobolo just a couple of days ago. (Sobolo is a cold drink made from brewing dried hibiscus flowers with herbs,spices, ginger and sugar. It’s enjoyed in places like Ghana and Jamaica) The recipe is fairly simple and is one you can use for entertaining large crowds.

Since I pre-made the hibiscus drink portion I won’t add that in this post but you can find the same exact steps I followed here. The only thing you need to do differently is to use half the water so the drink is more concentrated and sweeter. After you’ve made this you’re ready to make mojitos!

 

what you need:

  • 2 limes, chopped
  • mint leaves
  • ice
  • 2 cups hibiscus drink
  • 3 shots white rum
  • club soda

*makes 2 drinks, split the ingredients between 2 glasses

the how-to:

step one: muddle the limes and mint leaves in glasses

step two: add some ice

step three: add a cup of hibiscus drink to each glass

step four: add 1.5 shots of rum

step five: stir and top off with club soda, and enjoy!

To make these drinks for a large group follow all the above steps but do it in a large jug. Do not add the club soda until you have poured into glasses to serve.Try this perfect end-of-summer cocktail. Visiting Cuba definitely didn’t help my mojito problem therefore I will be experimenting with more recipes, hopefully before the summer ends (please don’t leave us summer ;(). I hope you guys try this because it’s the bomb.com!
